Winemaking and Ageing:
Pre-fermentation cold maceration for 4 to 6 days, temperature-controlled alcoholic fermentation with indigenous yeasts in concrete tanks, racking and aging for 14 months in new 400L oak barrels.

Red meat dishes with simmered sauce, mature raw milk cheeses

Deep ruby red robe with purple highlights. Intense and complex nose of ripe red and black fruits, blackberry jam, topped with a subtle roasted oak. Structured and concentrated on ripe fruit, enhanced by a luscious roasted oak; the tannins are present and promise a very refined finish.
