Winemaking and Ageing:
Pre-fermentation cold maceration for 4 to 6 days, temperature-controlled alcoholic fermentation with indigenous yeasts in concrete tanks, racking and aging for 14 months in 350 and 400L oak barrels

Veal sauté with olives, quail stuffed with mushrooms

Deep ruby red robe. Intense nose of ripe red fruits, wild strawberry. Lively and structured attack then revealing intense and ripe fruit which lingers in a spicy finish.
