Winemaking and Ageing:
Pre-fermentation cold maceration for 4 to 6 days, temperature-controlled alcoholic fermentation with indigenous yeasts in concrete tanks, racking and aging for 14 months in 400L oak barrels, 1/3 of which are new.

Meats in light sauces, veal sweetbread fricassee

Deep, dark ruby red in color. The nose offers aromas of ripe red fruit. This wine displays great complexity, with a lively and concentrated attack followed by ripe, structured fruit that lingers in a tense, oaky finish; a wine with great potential.
