In the vineyard: Taking the time
TO DO THE RIGHT THING
We cultivate 17 hectares between Maranges and Santenay. Each plot is different: soil, slope, exposure. We adapt our practices to each location. We plow the soil, sow cover crops, and mow regularly. We practice integrated pest management: intervening only when necessary. Cordon de Royat pruning is our signature. It spreads the grape bunches, improves aeration and sunlight exposure. It naturally limits yields and results in more even ripening. The harvest is done by hand to preserve the integrity of the fruit. It's a simple choice: taking the time to do things right.


In the cellar: Winemaking with
CALM AND PRECISION
We make our wine in a new winery, designed for meticulous work. It is modern and functional. We strive for precision, not artifice. Our role is to guide the wine at its own pace, so that it remains true to its terroir and its vintage.
For the reds, it all begins with three weeks in concrete vats, with a cold phase to preserve the fruit, followed by a warmer phase to stabilize the structure. We then rack the wine, gently press it, remove the must from the lees, and then let each wine age for twelve months in oak barrels, with the proportion of new oak adjusted according to the terroir and the vintage.



For the white wines, we choose direct pressing and stemless juice. They rest for a few days in cold stainless steel tanks before settling, then ferment and age in barrels for ten months.

The techniques, the way of observing, the common sense… everything was passed down naturally, season after season. Today, my father and I are moving forward together, and I bring my own perspective. I'm developing the domain step by step, while remaining true to what I received. The construction of our new, modern winery in Chassagne-Montrachet is a testament to this. It's an investment that reflects our desire to progress, to gain precision, and to strive for even greater quality.
